Omelette

Ingredients:

2 tbsp Røros Butter
1/3 cup diced bacon
4 mushrooms
1 cup paprika
1 cup spring onion
3 eggs
3 tbsp cottage cheese
3 tbsp cream
black pepper

Directions:

Dice bacon, mushroom, paprika, and the spring onion. Heat pan to medium – high heat. Melt the butter and brown the bacon. Add the mushroom and let it sizzle in the pan. Add remaining vegetables and cook until softened. Lower heat to medium heat. Whilst the vegetables cook, whisk together eggs, cottage cheese and cream. Pour into pan. Add pepper to taste.
