Norwegian Lapper
Ingredients:
4 eggs
½ cup granulated sugar
38 oz buttermilk
4 1/3 cup plain flour
½ cup Unsalted Røros Butter
1 tsp Bicarbonate of Soda
2 tsp Ammonium Carbonate/Hartshorn salt
Served with sour cream and jam
Directions:
Whisk together egg and sugar. Add melted butter and stir until fully combined.
Add the remaining ingredients and mix well. Let the batter sit for 15 minutes.
Heat butter in a skillet and once hot add a few tablespoons of the batter.
Cook the lapper on both sides.
Serve with sour cream and jam.
