Norwegian Christmas Cookies

Ingredients:

1 cup (250g) Røros Butter unsalted – room temperature
1 1/3 cups (300g) sugar
1 egg
3 tbsp vanilla
2 tbsp baking powder
1 2/3 cups (250g) plain flour
1 2/3 cups (250g) potato starch

Directions:

Mix butter and sugar until white. Add the egg and mix well. Add all dry ingredients and mix until combined. Cover the dough and place in fridge for about 2 hours. Divide the dough into 4 pieces and roll 2 cm wide rolls. Divide rolls into 25 pieces. Place on baking tray. Sprinkle with a bit of cinnamon before cooking.

Cook for 8 minutes at 350°F.
