Norwegian Christmas Cake
This Christmas cake is a favorite for Christmas. It is to be enjoyed with a thick layer of Røros Butter. This is a classic cake that has been baked and enjoyed for Christmas for generations.
Ingredients:
2 ½ cup (6dl) full fat milk
1 standard packet yeast (11g)
2 eggs
1 cup (2dl) sugar
1 cup (200g) Røros Butter
2 tsp cardamom
7 cups (1kg) plain flour
1 ½ cups (3dl) raisins
Directions:
Mix milk, eggs, and melted butter. Add all the dry ingredients and mix until completely combined. Cover the dough with a clean tea towel and let the dough rise for 1 hour. Powder table with flour before emptying the dough unto it. Knead in raisins. Divide dough into three even pieces, and shape. Place in a greased cake tin. Set aside and let rise for 40 minutes. Glaze the breads with egg before cooking.
Cook at 400°F for 40 minutes.
