Gourmet Waffles

Ingredients:

3 eggs

1 1/3 cup full fat milk or buttermilk

2/3 cup cottage cheese

2/3 cup plain flour

2/3 cup whole wheat flour

1 tsp baking powder

2 tsp granulated sugar

1/3 cup melted Røros Butter

3 tbsp water

Serving suggestions:

Option 1: Organic sour cream, red onion, fresh dill, Caviar of Kalix/ Roe.

Option 2: Organic sour cream, fried chanterelles, bacon and pickled red onion.

Option 3: organic sour cream, smoked white fish and lingonberry jam.

Directions:

Whisk the eggs lightly. Stir in the milk. Sift in the flour and mix until completely combines. Add the cottage cheese and melted butter at the end.

If the batter is too thick, slowly add cold water until batter has desired consistency. Leave the batter to set for 20 minutes. Cook on low to medium heat in a waffle cooker. Cool on rack before serving.

Add your preferred topping and enjoy!
