Christmas Cod with Røros Butter Sauce
Ingredients:
For the cod:
about 1 3/4 pounds codfish
4 cups full fat milk
4 tbsp salt
2 tsp black peppercorns
4 bay leaf
about 1 1/3 pounds baby potatoes
For the mash:
about 1 1/3 pounds turnip
about 2/3 pounds carrot
5.3 oz Unsalted Røros Butter
3.5 tbsp full fat cream
Salt & pepper
For the butter sauce:
7.2 oz full fat cream
1/2 tsp corn starch
1 cup Unsalted Røros Butter
3 tbsp grass onion
1 tbsp lemon juice
Directions:
- Peal and dice turnip and carrot. Boil until soft. Remove all water and add Røros Butter and cream. Mash until desired consistency, add salt and pepper according to taste.
- Heat milk, salt, pepper, and the bay leaves to about 80 degrees. Let the milk cool before adding the cod. Leave the cod in the warm milk for an hour to soak. After an hour bring the milk to a simmer and poach the fish for 15 minutes.
- Boil cream with corn starch, add cold butter whilst stirring. Take the sauce of the heat and add lemon juice, grass onion, salt and pepper according to taste. Serve with potato.

- Boil cream with corn starch, add cold butter whilst stirring. Take the sauce of the heat and add lemon juice, grass onion, salt and pepper according to taste. Serve with potato.
