Buttery Pecan Cookies
Ingredients:
Dough:
2 cups plain flour
1 tsp baking powder
1/2 tsp baking soda
12 tbsp Røros Butter
3/4 cup brown sugar
1 tbsp vanilla extract
1 large egg plus 1 large yolk
Glazed pecans:
6 tbsp brown sugar
1 ½ tbsp water
2 cups pecan nuts
Directions:
- Preheat oven to 350°F.
- In a bowl, whisk together flour, baking powder, and baking soda.
- Slice 5 tablespoons of the butter into pieces and place them in a separate bowl.
- Melt the remaining butter in skillet over medium heat. Brown the butter until its dark golden brown.
- Pour the melted butter into the bowl with the room – temperature butter, and stir until combined.
- Stir in the sugars, vanilla, and salt.
- Whisk in egg and the yolk until combined.
- Let the batter sit for 2-3 minutes before whisking again.
- Pour the flour mixture into the bowl and combine.
- Add the pecans, using your hands to knead them in.
- Shape the dough into small balls.
- Cook in the middle of the oven for about 10 minutes.
