American Pancakes

Ingredients:

1 2/3 cup buttermilk

1 cup cottage cheese

3 eggs

1 1/3 cup plain flour

2/3 cup whole wheat flour

½ tsp Bicarbonate of Soda

2 tbsp sugar or other sweetener of choice

3 tbsp Røros Butter

Røros Butter for cooking

Directions:

Add milk and cottage cheese in a medium size bowl. Use a hand mixer to dissolve the cottage cheese into the milk.

Which in egg and butter. Add the flour, sugar and bicarbonate of soda and mix until combined.

Adjust the thickness of the matter according to preference using milk and flour.

Let the batter sit for 20 minutes before cooking.  Cook on low heat in a pan.

Serve with jam and sour cream or maple syrup and bacon.
