Norwegian Sour Cream Porridge (Rømmegrøt)
Ingredients:
2 1/3 cup high fat sour cream (ideally 39%)
4.2 oz plain flour
2 cups milk
1 tsp salt
Served with:
Sugar
Cinnamon
Unsalted Røros Butter
Directions:
Simmer sour cream in a covered saucepan for 2 minutes. Add half the flour and stir well to avoid lumps. Continue to simmer until the butterfat from the sour cream rises to the top. Skim of the butter fat. Add the rest of the flour and stir frequently as you bring the sour cream mixture to the boil.
Gradually add the milk, and whisk until you get the desired consistency.
Let the porridge simmer for 5 minutes. Add 1 tsp salt at the end.
Serve with Unsalted Røros Butter, sugar and cinnamon.
